What can we say about our recent event catered by Chef Charles Catering, except "C'etait Magnifique!"....It was magnificent! Chef Charles and his crew made celebrating my son's wedding a truly special occasion. What started out to be a last minute get together in our home, turned into a magical evening for the newlyweds, family, and friends.

Everyone continues to rave about the delicious food, the presentation and tremendous service. Chef Charles and the entire staff went out of their way to ensure every detail was taken care of from the moment they walked through the door. It truly was the first party we have hosted that I have been able to enjoy! What a treat for the hostess!

We had used Chef Charles in the past and were very aware of his culinary expertise, but had not utilized the "full service" offered by Chef Charles Catering. Never again! From delivering and setting up the rental items, to cleaning and packing, and everything in between...It was taken care of by a friendly, capable and professional staff. Natasha, Gina and Rob, we cannot thank you enough.

Chef Charles and Sylvain, merci beaucoup for helping us create a delectable menu and a memorable evening for the happy couple.

What a pleasure it was to work with you for our party last night. The food was absolutely delectable! Our guests were raving about the food, as we were, trying to decide which item was their absolute favorite-- an impossible task! We had many requests to share your name and number and, because you already have many fans, we had quite a number of people exclaiming "Chef Charles! We're so happy it's him!"  

All of your attention to detail added greatly to the luxurious feel of the party-- (i.e. the rose petals, the martinis on our theme napkins, the food presentation, textures, sauces, arrangements, etc. etc.) Sylvain, the party went along beautifully because you and all of your staff were so attentive and eager to do whatever it took. I never imagined that I would actually enjoy the party, as the hostess, as much as I did. Hunter, Lisa and Greg expressed the exact sentiments in our conversation following the party.

Chef Charles took all the responsibility and work away from my husband & I so we could enjoy our house guests before, during and after the party!

The food was fabulous and the service was impeccable! We had so many wonderful compliments on our party which are all attributed to Chef Charles' superb catering and staff. The food was so good, that some party guests decided to stay with us and cancel their other party invitations that evening!

"Cooking under the helpful tutelage of Chef Charles was fun and educational."

"Combining a culinary experience with our own personal tour guide made the trip relaxing, interesting and educational. Chef Charles took us to his personal home on the quaint Island of Re located off the northwestern coast of France.
Every morning we bicycled to a different nearby market and picked out the fresh fruits, vegetables, meat, cheese and/or fish we would prepare together for dinner that evening.
In the afternoons we visited historical sites and other Island places of interest. Lunches were enjoyed at various local brassieries followed by a tour of the kitchen.
Cooking under the helpful tutelage of Chef Charles was fun and educational. We had a small group and everyone participated in the planning, preparation and dining experience! I brought home many new recipes, cooking techniques and a new attitude toward cooking!
My husband and I enjoyed meeting the local people in the villages as well as Chef Charles' family and friends. It was a terrific experience and a very memorable vacation.....we look forward to another trip with Chef Charles soon!"

Think about this for a moment: Most people who are in love with life are keen on good food.  That's true, isn't it?  Of course it is!  Take that great hot dog with the chili, mustard, and sauerkraut on it.  It tastes good doesn't it?  Sure it does --- because you are eating it at the baseball game!  The taste of Steak Diane is more enjoyable in a restaurant in Manhattan then in a bowling alley in Pittsburgh. The dining experience must fit the mood of the occasion.  
So, we can say ambience is a great part of enjoying food. A great dining experience comes from the perfect combination of quality ingredients, culinary skill, presentation and décor.  It isn't something that's learned. You either have it or you don't.  Chef Charles has it; he has the ability to create dining extraordinaire.
The point:  meals of distinction are comprised of great preparation and dining environment.
 As an international airline pilot, I've dined on most of the great foods from around the globe.  I enjoy cooking it and eating it.  I especially enjoy preparing this art form we call 'food' with my good friend Chef Charles.  
Chef Charles is one of the finest chefs in the culinary land and may I say he is a patient instructor with this old pilot. Charles is a chef who has broken the code. He has the amazing talent of taking the best herbs, meats and vegetables in the world and creating meals which are the epitome of fine dining. Chef Charles is one of those masters who works cooking utensils, food, and spices like a conductor of the Boston Pops.  
The official chef of Trends Taste and Travel®, Chef Charles Semail, loves his work and it shows. Whether preparing a French B-B-Q  or poached salmon, it's clear he takes great joy and pride in his profession. That's why he is such an added attraction on my radio show.  
Charles appears as a special guest on the Trends Taste and Travel® radio show with new and witty dishes from France.  It doesn't take long before the chemistry between Charles and Captain Cy begins to flow like French wine.

We sponsored a wine and food pairing for the York County Medical Alliance for about 35 people. The event was unrehearsed but was tremendously successful and well received by all who attended.
What impressed me most about Charles during the event was how calm and organized he was getting 8 different hors d'oeuvres size dishes prepared over a two hour period during the tasting.
Charles' dishes matched the wines perfectly. He had as much or more enthusiasm for what he was doing as we did and spoke about the food while we spoke about the wine.
We plan to repeat this event this coming year and in view of the reception it received this year, we expect well over 100 people to come next time.
